9-Year-Old Battling Celiac Disease Enjoys Pizza For The First Time

Deerfield Beach, FL (PRWEB) September 13, 2006 -– Margaret (Maggie) Gillis, a Deerfield Beach resident, enjoyed pizza for the very first time in her life recently. Last month while her mom, Karen Gillis, was reading the local newspaper she came across an article on Pizza Fusion that mentioned their organic and gluten-free items. She immediately phoned the store to have them deliver a gluten-free pizza. “Maggie anxiously awaited at the door for the delivery, she just couldn’t believe it,” Karen Gillis explained.

The 9-year old battles Celiac Disease and can only consume gluten-free foods. She lives a life unlike her schoolmates, friends and family and must follow a very strict diet that cannot have any gluten in it, including wheat, barley, rye or oats.

Celiac Disease (CD) is a genetic disorder. For people with CD, eating certain types of protein, called gluten, sets off an autoimmune response that causes damage to the small intestine. This, in turn, causes the small intestine to lose its ability to absorb the nutrients found in food, which then leads to malnutrition, sever symptoms and a variety of other complications. Children with the disorder can have what is known as “failure to thrive,” a condition where their bodies are not growing and maturing as expected. Today approximately 1 in 133 people suffer with this disease and only 3% of them have been officially diagnosed.

When Maggie was one year old and began to eat solid foods her mom noticed a drastic change in her growth. Maggie’s stomach had enlarged and she stopped walking. After numerous doctors visits with no answers, an endoscopy was performed to examine her intestines and from there she was diagnosed with CD.

Being diagnosed with CD changed not only Maggie’s life but also all those around her. Karen had to completely alter her cooking habits and inspect all of Maggie’s food. Today after years of reviewing the ingredients on food labels along with intensive research she has been able to give Maggie as close to a normal life as possible.

“Maggie’s missed out on a lot of common childhood occurrences due to the food served – school parties, birthday parties, sleepovers, etc” Karen said. “For many pizza is classic childhood favorite and now I’m glad it is one of Maggie’s too.”
