On Tuesday, February 20, 2007, at The Phipps Mansion in Denver, Colorado, gluten-free industry pioneer and cookbook author Carol Fenster, Ph.D. of Savory Palate, Inc. and Executive Chef Matt Selby of Vesta Dipping Grill and Steuben's Food Service will present The Gluten-Free Flour Code and When Worlds Collide as the second of 11 monthly lectures and tastings that explore the art and science of gluten-free cuisine.
This February, take an in-depth look at the wide world of gluten-free flours and their culinary powers with a focus on flour blends for gluten-free creations and recipe substitution secrets that will help transform favorite wheat-based recipes into delicious gluten-free versions. Led by Carol Fenster, this presentation is designed to be a necessary primer for anyone interested in learning or brushing up on the basics and essential strategies for baking and cooking the gluten-free way using nutritious, artisanal ingredients.
And to pamper the GF palate with a signature style all his own, acclaimed Executive Chef Matt Selby of Vesta Dipping Grill and Steuben's Food Service (Denver) will demonstrate how to make a savory Wild Mushroom Tartlet with Goat Cheese and Roasted Tomatoes using selected gluten-free flours.
